Pelón Verde is a rare, unclassified or variant thornless agave (part of the Agave angustifolia family) native to the rugged Chontal region in the Sierra Sur of Oaxaca. Sergio’s cultivated Pelón Verde plants are matured for 9 years, then pit roasted for 4 days. Fermented for 12 days in pine wood, double distilled in copper pot stills. 320 liters made for the world. 45.8% abv
