VDF Rouge "Chemin Faisant"

2021

70% Cinsault/30% Syrah. "Chemin Faisant" is the first vintage of the second wine from new estate Domaine La Providence, the wine's name aptly translating as "path in progress". In the northwest corner of Provence at 280-300 meters above sea level, the vines are planted on marine-originated soils that are sandy, silty, stony, rich in limestone and low on clay. The Cinsault is a 0.6-hectare plot of 40-year-old vines, isolated from the rest of the domaine and surrounded completely by woods. The Syrah is a 1.2-hectare parcel of about 30 years old. The farming is certified-organic and the harvest is manual.

The two varieties were vinified separately. The whole clusters of Syrah went through a carbonic maceration in stainless steel tank with daily pumpovers; it was aged for 6 months in steel. The Cinsault was destemmed and spontaneously fermented in egg-shaped plastic vats and steel tanks with foot treading and regular punchdowns; it was aged for 6 months in tank. The two wines were blended and bottled without fining or filtration and with its only, very small dose of sulfur (2 g/hl). Domaine La Providence lies within the Coteaux d'Aix-en-Provence AOC, but opts for Vin de France classification.
