From Elena Pantaleoni herself: "Scolmo is a new wine we are very proud of. In some Barbera vineyards, where the soils are poorer, the clusters tend to ripen early, drying directly on the vine.  Since 2018, we have begun selecting these clusters, harvesting them in multiple passes through the rows. The grapes are pressed in a vertical press and ferment in steel; the wine then rests in partially filled barrels, a condition that causes oxidative maturation. 'Scolmo' in Italian in fact refers to something that is "partially emptied" or "not completely full”. It is a perpetual wine: produced by allowing different vintages to mature together, adding new wine to the barrels each year. A portion of the wine is then bottled, but the barrel is never completely emptied. The vintages present so far include 2018-2020-2021-2022-2023, and future harvests will be added, blending with the previous ones over time. Scolmo is therefore an oxidative wine with an alcohol content of 15.5%. Its structure is balanced by the interplay of sugar and acidity, while the oxidative notes enrich it with flavors of nuts and spices, giving it depth and a memorable persistence. The label was designed by a young graphic artist, Valeria Accurso. The illustration refers to the "part des anges," the portion of alcohol that naturally evaporates due to the porosity of the barrel, contributing to the oxygenation of the liquid and the concentration of aromas. This first bottling includes 900 bottles of 500 cl."
