100% Chardonnay. From a combination of estate and purchased fruit grown on clay-limestone soils and farmed organically. The whole bunches are pressed and fermented spontaneously with indigenous yeasts and with zero sulfur. The wine is aged for 18 months in a mix of stainless steel, barrique and foudre. It is bottled without filtration or sulfur.
