Menetou-Salon's stoney soil gives a lot of minerality to the wine. Vines average 26-30 years-old. Fermented and aged in stainless steel. 2015 was the first vintage produced. Average production is 5,000 bottles per year.

Located just across the Loire River from Sancerre, the soil here has river deposits and the Portlandian limestone joins the Kimmeridgian limestone. You find more red flint in Pouilly compared to the gray flint you find in Sancerre. The flint is known to add smokey notes to the wine - fumé!
