L'eau Epicée' (Riesling / Gewurz)
Riesling 70%, Gewürztraminer 30% (20% direct press, 10% skin contact). The fruit was sourced from an organically farmed 3.5 acre vineyard north of Chehalem Mountains, farmed by Onesimo Mora. The vines were planted in the 1990's and are own-rooted and dry farmed. The Riesling and a portion of the Gewürztraminer were pressed and fermented together in stainless steel. The remaining Gewürztraminer was destemmed and fermented on the skins in open top fermenters until dry before pressing to neutral oak. The lots were combined after primary fermentation, and a portion of frozen Riesling must was thawed and added to the tank before bottling and laid down for winter. No added sulfur.
