Muscadet Sèvre-et-Maine "Château Thébaud"

1100% Melon de Bourgogne. Pépière has 14 hectares of vines in the cru of Château Thébaud, but only a 1.5-hectare parcel from 25-70-year-olds goes into this bottling. This parcel has reddish, sandy granite soils featuring enough clay to make it much slower-ripening and the wine in need of more aging than their cru Clisson. The farming is certified-biodynamic. All vineyard work including harvest is manual. The whole bunches are pressed very gently and the juice settled naturally in steel tanks overnight. The must is fermented spontaneously with indigenous yeasts and a small amount of sulfur. The wine is moved by gravity to underground cement tanks, where it ages on the lees for around 3.5 years. It is bottled without filtration or any additional sulfur.
