Muscadet Sèvre-et-Maine "Gorges"

100% Melon de Bourgogne. The cru Gorges is Pepière's smallest bottling. It stands out as well for being the only parcel whose soils star not granite but rather gabbro. Gabbro is a formation of volcanic basalt. Pépière doesn't own the vineyard but rather trades some fruit with the esteemed domaine of Michel Brégeon. These Brégeon vines are 50-60 years old, farmed organically, harvested by hand by Pépiere and brought to their cellar. The whole bunches are pressed very gently and the juice settled naturally in steel tanks overnight. The must is fermented spontaneously with indigenous yeasts and a small amount of sulfur. The wine is moved by gravity to underground cement tanks, where it ages on the lees for up to 3 years. It is bottled without filtration or any additional sulfur. 2022 is the first vintage of Gorges since 2019.
