Muscadet Sèvre-et-Maine Sur Lie "Briords-Cuvée Vieilles Vignes"

100% Melon de Bourgogne. Pépière has 3 hectares in Briords, a lieu-dit is in the cru of Château Thébaud that sports similar sandy granite soils with enough clay to slow down ripening (versus, say, in Clisson); but much deeper top soil in Briords means that the wine demands much less time on the lees compared to their Château Thébaud wine. Their vines here are 60-70 years old. The farming is certified-biodynamic. All vineyard work including harvest is manual. The whole bunches are pressed very gently and the juice settled naturally in steel tanks overnight. The must is fermented spontaneously with indigenous yeasts and a small amount of sulfur. The wine is moved by gravity to underground cement tanks, where it ages on the lees for 7-8 months. It is bottled without filtration or any additional sulfur.
