The 2025 Soif Rouge is composed of Pinot Noir (90%), Aligoté (5%), and Chardonnay (5%) from three organically farmed sites in the Willamette Valley: No Clos Radio (Pinot), Nemarniki (Aligoté/Chardonnay), and Ony Parcel (Pinot). The white grapes were pressed together and began fermentation in stainless steel, white the Pinot Noir was fermented whole-cluster for six days with daily pumpovers. The fermenting white wine was then blended with the pressed Pinot Noir to complete primary fermententation. The wine was aged in neutral Burgundy barrels for six months before bottling, unfined and unfiltered. This is fresh and elegant Pinot Noir with an extra lift from the white fruit addition.
