Muscadet Sèvre-et-Maine "Monnières-Saint Fiacre"

100% Melon de Bourgogne. Pépière has vines in a couple of parts of the cru of Monnières-St.-Fiacre (including the lieu-dit of Gras Moutons). The parcel in this bottling features 60-year-old vines on sandy, gneiss-based soils with more clay than in Gras Moutons, which slows down ripening and necessitates longer aging for the wine . The farming is certified-biodynamic. All vineyard work including harvest is manual. The whole bunches are pressed very gently and the juice settled naturally in steel tanks overnight. The must is fermented spontaneously with indigenous yeasts and a small amount of sulfur. The wine is moved by gravity to underground cement tanks, where it ages on the lees for 2.5 years (only Château Thébuad goes longer at 3.5 years). It is bottled without filtration or any additional sulfur.
