100% Melon de Bourgogne. The Clisson bottling comes from a 50-100-year-old section of vines in Pepière's core vineyard in the cru of Clisson near the winery. This is the first Pépière site to be harvested thanks to the very poor, sandy, no-clay soils. They are pure granite, a very hard, compact granite--the top soil is a decomposed form of it with a lot of mica and quartz over granite mother rock. The farming is certified-biodynamic. All vineyard work including harvest is manual. The whole bunches are pressed very gently and the juice settled naturally in steel tanks overnight. The must is fermented spontaneously with indigenous yeasts and a small amount of sulfur. The wine is moved by gravity to underground cement tanks, where it ages on the lees for 2 years. It is bottled without filtration or any additional sulfur.
