Vino da Uve Appassite "Vino del Volta" (2011)
100% Malvasia di Candia Aromatica. From 30-50-year-old estate vines, farmed organically and harvested by hand. The bunches are picked at normal ripeness and in perfect health, then dried in the sun for 5-15 days, depending on the vintage. They are pressed in a small, vertical hand press, fermented naturally with native yeasts in barrel, and aged in used barrique for 3 years, followed by 2 more years in bottle. The classification of Vino da Uve Appassite does not permit the variety or vintage on the label; the wine is always from Malvasia and from a single vintage.
