From a .16 hectare parcel planted in the mid-1970's. It has a deep clay top soil that is ploughed to push the roots to go down to limestone subsoil. Native yeast fermentation in stainless steel. Aged in French oak barrels for 24 months (approximately 15% new). 30-45 g/L sulfur added at bottling.
