100% Assyrtiko from the Vóila plateau in Sitia (eastern Crete), facing northeast. at 580-600m.  Harvest between August 31 and Sept 14.  Skin contact was carried out for 45% of the grapes for an average of 20 hours.  The other 55% is free-run juice.  Spontaneous fermentation and aging in stainless steel. The wine did not go through malolactic fermentation.
