100% Liatiko from two areas of Crete.  The vineyards of Rethymnon in Central Crete are at 850m and those in Sitia, East Crete, are at 580m, facing north.  There are both bush vines and spur cordon-pruned vines. Harvest between August 8th and 20th.  Macerations of 6 to 8 days.  Aged between stainless steel (85%) and foudre (15%) with 8 months on the lees, with no fining or cold stabilization.
