A blend of Red Criolla varietals (70% Cereza, 20% Criolla Chica, 5% Canela, & 5% Moscatel Tinto). Grapes are hand harvested, destemmed and fermented with indigenous yeasts. Aged for seven months in concrete tanks, neutral oak barrels, and 50 liter demijohns on the lees. Unfined, unfiltered.

"The heart of this red is in Paraje Hilario, with very old vineyards planted primarily to cereza. It was fermented with native yeasts and their skins and then aged in concrete for seven months before being bottled. This is a wine to drink by the liter—it's juicy, refreshing, and light-bodied with vibrant acidity. One to quench your thirst in the summer and a good example of the character of this area 1,600 meters up in San Juan."
