100% Uva Tosca from the 2ha 'Vigna del Lago' vineyard, 300m, facing west.  Harvest at the very end of August.  Destemmed, maceration for 1 day, gently pressed.  Fermentation and aging in concrete. Secondary fermentation in bottle, triggered with unfermented grape must during the waxing moon, on February 22, 2024.  Undisgorged.  5961 bottles made. Cattabrega is a nickname for a loud, prank-loving friend.

“I’ve always been intrigued by rosè sparkling wines but often found myself forcing red grapes to become something they were not meant to be. After many soft-press trials with deep dark Lambrusco grapes, from the 2021 vintage I’ve started working with Uva Tosca, a long-time forgotten grape (first written news of Uva Tosca date back to 1600) that was accused of being 'low in colour and high in acidity.'  With the help of the University of Bologna I was able to locate the last rows of Uva Tosca and bring it back in producton in my vineyards.  With a quick maceration I’m able to get a rosè with a bouquet of small red fruits and still a lot of freshness and drinkability.”
