Vino Rosso Frizzante 'Trifalco'


Lambrusco del Pellegrino (aka Lambrusco Fioranese aka 'Lambruscaun') from the vinyeards Sabatina di Sopra (220m, west/northwest) + Vigna del Lago (300m, west). Harvest can be as late as the third week of October. Fermented in stainless steel with macerations of 6 days, manual punchdowns only. Secondary fermentation in bottle, triggered by unfermented grape must, during the waxing moon on February 21, 2024. Released undisgorged in December 2024. 2,226 bottles made. The wine's name comes from Pellegrino (peregrine falcon) + the wine’s three dimensions (fruit, saline, spice): tri + falco → Trifalco.
“It is a 100% Lambrusco del Pellegrino deep red sparkling wine with a joyful fruit focus and a salty and spicy finish. Lambrusco del Pellegrino is one of those forgotten grapes that in the late 1800s defined the area of Castelvetro di Modena as one of the most talented and unique grapes in the region. It is also a grape capable of withstanding the challenges posed by the climate change thanks to its sparse bunches and long maturation cycle. Podere Sottoilnoce currently has the most Lambrusco del Pellegrino vines in all the region.”
