100% Liatiko from Rethymnon, central Crete.  At altitudes exceeding 850m on Mt. Kedros, pre-phylloxera Liatiko vines have been cultivated for over a century in a low bush format, shielding the fruit from Mt. Psiloritis winds and intense Cretan sunlight.  The grapes were harvested on September 3rd, destemmed and slightly crushed and had a short skin contact for 2 hours. The free-run juice fermented at controlled temperature in stainless.   Τhe wine matured for 2 months in 600-litre foudres.
